(Don't) Stop bragging!

Of course we love to brag. Who doesn't? But our high opinion of ourselves is hardly unbiased. So if you feel like us tooting our own horn lacks credibility then check our Web site each month to see what some of our customers have to say about us:

"Recess came to our location and brought the equipment necessary to help learn about fitness and living a healthy lifestyle.

They brought an excellent presentation that fit in with what the participants were experiencing at that point in their lives and also gave them exercises they could do at home with either nothing at all or simple, cheap equipment.

The participants gave us excellent feedback and thought that Recess was fun and informative."

Healthy lifestyle D.I.Y. - Greens made easy

Want a yummy meal you can make in minutes?

Do you ever wonder just how you will manage to eat your greens? Well here’s how you can feed yourself after work in less than ten minutes and still manage to get your greens.

You will need:
• 1 tbsp oil
• 1 sm. onion
• 2-4 cloves of garlic
• A bunch of kale or Swiss chard
• A can of butter beans or great white northern beans
• Canned (8 oz), or, fresh tomatoes (5 small)
• Fresh herbs (I pick oregano, thyme, sage, rosemary from my garden and - yes- from my neighbors’ gardens, too)
• Vegetable, fish or chicken bullion (The Better than Bullion brand is easy and yummy but any will do)

To prepare:
1. Put the garlic, onion, and herbs in a food processor.
2. Put 1 tbsp olive oil in a large fry/saucepan and heat on medium.
3. Sauté herb/onion/garlic mixture for 1 minute.
4. Add chopped fresh or canned tomatoes. Cook with herbs, etc. for 2 minutes.
5. Add 6-7 cups of water. Add bullion per instructions on package. Stir until bullion is dissolved.
6. Add beans and greens.
7. Simmer until kale or greens are tender.
8. Add salt and pepper to taste.

Voila! The proportions and cook times are not set in stone, but the sequence is important. Add your own touches with herbs and spices that you like. Maybe throw in other prepped veggies that you think would be good (leeks, pumpkin, potatoes, whatever is easily cut up or lying around).

Don't get too worried if you don't have all of the right vegetables - make a quick shopping trip after work or at lunch and buy what looks good. The important part is that soup can be a quick, hearty, easy and healthy way to enjoy fall vegetables. It also makes chillier weather seem a little less daunting.
